Classic Recipes

Peanut Butter Cookies (makes 30-50 cookies)

~12 oz. of softened butter
~1 1/2 cups of white sugar
~1 1/2 cups of brown sugar

*cream together with mixer*

~3 large eggs
~1 1/2 cups of peanut butter
~1 tablespoon of vanilla

*add to the butter mixture and beat on high till smooth*

~4 1/2 cups of flour
~3/4 teaspoon of salt
~3/4 teaspoon of baking soda
~3/4 teaspoon of baking powder

*add to the rest of the dough and mix on low*

*roll the dough into small pinpong sized balls and place on a cookie sheet*

*heat the oven at 350`F and bake them for 10 minutes... place on wire racks after they're out of the oven*

*an option is adding 2 cups of chocolate chips after adding the flour*

Double Chocolate Cookies (makes 30-50 cookies)

~1 1/4 cups softened butter
~1 1/3 cups of white sugar
~1 1/4 cups of brown sugar

*cream together with mixer*

~3 large eggs
~2 1/2 teaspoons of vanilla

*add to the butter mixture, beat on high till creamy*

~3 3/4 cups of flour
~3/4 cups of cocoa powder
~3/4 teaspoons of salt
~1 1/4 teaspoons of baking soda

*combine dry ingredients, and beat on low*

add
~1 1/4 cups of chocolate chips
~1 1/4 cups of white chocolate chips

*mix until the chips have been evenly combined with the dough*

*roll dough into pingpong sized balls and place on a cookie sheet, use a cup or fork to flaten the cookie*

*heat the oven at 375`F and bake them for 10 minutes, after they come out of the oven, place them on a wire rack.

Oatmeal Raisin Cookies (makes 30-50 cookies)

~1 cup of softened butter
~1 2/3 cups of white sugar
~1 Tablespoon of molasses

*cream together on medium speed*

~2 large eggs
~1 tablespoon of vanilla

*add to the butter mixture, beat on high till creamy*

Combine dry ingredients seperately
~2 cups of flour
~1 teaspoon of salt
~1 teaspoon of baking soda
~3/4 teaspoon of cinnamon

*add to the rest of the dough and mix until evenly combined*

~2 3/4 cups of rolled oats
~1 1/4 cups of raisins
~3/4 cups of pecans, chopped (optional)

*add to the rest of the dough until evenly combined)

*roll dough into pingpong sized balls and place on a cookie sheet*

*heat oven at 350`F and bake in the oven for 10 minutes (don't over bake)... place on wire racks once out of oven*

*an option is to substitute butterscotch chips for raisins and pecans*

Sugar Cookies (makes 24-30 cookies)

~1/2 cup of butter
~1 cup of sugar

*cream together*

~1 egg

*Add egg and mix with butter and sugar*

~1 3/4 cups of flour
~1 teaspoon of baking powder
~1 Tablespoon of milk
~1/2 teaspoon of vanilla
~1/4 teaspoon of salt

*add and mix until dough is smooth*

*Let the dough chill for 2 hours. Roll out dough 1/8 of an inch thick on a lightly floured surface. Use cookie cutters of your chose and dip cutters in flour before use. Place dough on an ungreased cookiesheet. Bake at 375`F for 12-15 minutes, or until lightly browned. Place on wire racks for 5 minutes*
